The yolk is where the nutrients are. The yolk is where the flavor lives. And almost half the egg’s protein is in the yolk.
Tossing the yolk to “be healthy” is like ordering a ribeye and cutting away the marbled center — keeping only the dry rind because you’re afraid of fat. It’s missing the point of the whole food.
